Camping Recipe: Campfire Brie

Ingredients

  • 1 baguette
  • 5 tbsp. extra-virgin olive oil, divided
  • 1 brie wheel
  • 1 small clove garlic
  • 2 tbsp. dry white wine
  • 4 thyme sprigs
  • 1/4 tsp. kosher salt
  • Freshly ground black pepper 

Directions

  1. Build a strong fire and lower the grill grate.
  2. Clean the grate by covering a paper towel in olive oil and brushing it over the grate with tongs. Be sure to scrub the charred spots.
  3. Cut the baguette into 1/2″ thick pieces and brush both sides with olive oil and grill the bread until crisp and browned. Around 30 seconds per side. Set aside.
  4. Prepare your cast-iron skillet by placing the brie in the center and score the top thoroughly.
  5. Slice the garlic cloves into thin spears and add half of them to the brie, poking them into the cheese and spreading them evenly over the entire round. Sprinkle the rest of the garlic on top of the brie.
  6. Drizzle the dish with wine and oil. Top with thyme and season to taste with salt and pepper.
  7. Cover the skillet with foil or a lid and grill for 10 minutes or until the cheese has melted through.
  8. Serve with toast. For more flavor, top with dried cranberries, cherries, and walnuts.
